More Leftovers

So I will admit that leftover pie is no great culinary innovation. In fact I think lots of people make some kind of pie with leftovers. The thing that was different for me when we started making this years ago was putting the mashed potatoes and stuffing in the pie. I had always just thought to make a creamed chicken (or turkey) add veggies and chopped potatoes and dump that into the pie shell. The mashed potatoes and stuffing go so well with the turkey — obviously — plus they provide a good bit of infrastructure to keep the top crust from sagging.

As good as the pie is it is just the same Thanksgiving meal served via a new delivery system. For something totally different we had these last night.

Turkey Tacos

The original recipe comes from Fine Cooking magazine and is made with chicken. We make this often to use up leftover roast chicken — whether homemade or one of those store-bought rotisserie ones — but turkey works equally well. The pie used up almost all of the sides so we were down to just turkey left so this was the perfect meal. Since I use a FC recipe I don’t want to reprint it here but the idea is simple enough:

  • Make a vinaigrette using olive oil, lime juice, garlic, and cumin. Add some cayenne if you’d like a little kick.
  • Add to this a bunch of chopped/shredded chicken and stir to coat.
  • In another bowl mix sour cream, diced onion, diced roasted red pepper (can be from a jar), garlic, and cilantro.
  • Place corn tortillas on a baking tray. Layer each with the chicken mixture, then the sour cream, then grated cheese. Cook in a moderate oven until the cheese melts.
  • Serve.

    yeah it all makes sense really. the pie is like pot pie. and the quesidillas [sp?] are a very wonderful yet standard way to use leftovers… everything tastes good in a wrap

    and way to go with the Whole Foods brand organic tortillas 😉

    oh man, leftovers are the best! food always tastes better to me the second time! i wish i had some turkey leftovers! it was nice to have something different for thanksgiving this year, but my mouth waters at the thought of all the food i missed! hehe.
