Traditions :: Wassail

Here we come a-wassailing….

Here We Come A-Wassailing

2 c. sugar
64 oz. cranberry juice cocktail
2 c. orange juice
2 Tbsp. lemon juice
2 cinnamon sticks

Mix sugar and 2 c. water in a large pot. Bring to a boil and stir continuously until the sugar is dissolved. Add remaining ingredients and 3 c. more water. Add cinnamon sticks and simmer until hot.

I find that letting it simmer with the lid on for a little while helps the flavors meld. Also, it can sometimes turn out a little sweet — I think this depends on the sweetness of the cranberry juice you use — so you may find you like it with less sugar. Finally, this is totally non-alcoholic so safe for the little ones. Traditionally, wassail is a spiced beer or a mulled hard cider but this is our family’s traditional version, we’ve had it at Christmas since I was a little girl at least.
