I *heart* Summer Dinners

And we have been having a bunch of good ones recently. On Sunday we made one of my all-time summertime favorites — shrimp & grits. Now before you freak out and say grits! yuck! here me out. Neither Stefan and I were raised in the South and neither of us ever had grits in our childhood. Our reaction to the grits served for breakfast at our southern college was grits! yuck! — actually almost all the food served there was gross, it was a serious problem — but the grits in this recipe are nothing like gross watery tasteless cafeteria grits. These grits are made from hominy and are so good. We omit the lima beans in the recipe and just use more hominy — chalk it up to the not being Southern thing but we’re not fans of lima beans either. Try the recipe though, it is so so good.

I use locally ground yellow stone-ground grits. They are fabulous!

Yummy! I wish I could come up with original summer meals. Winter is much easier for me.

Mmmm.. hominy grits? That sounds good. I was raised in the south, and still live there… grits can be a very touch and go food if not done right. 🙂

My kids would eat grits with every meal if I let them. Grits are a staple around here.
